Clean and Easy Chipped Beef

I’ve recently been experimenting with different chipped beef recipes and different types of beef. The most common beef used for the chipped variety is the Buddig brand and we all know this works well. What many of you do not know is that there are a variety of other exciting “dried beefs” you can find in the same location of your favorite supermarket. I found 2 different kinds at my Giant and I bought them both. This particular day I’m going with the “Carson’s Dried Beef”. On the back of the package was an simple recipe that even I could throw together easily.

Ingredients you need:
1 package of Carson’s dried beef
4 tbsp. butter
4 tbsp. flour
2 1/2 cups of milk (I used whole milk)

With that I pulled out a medium sized saucepan, fired up the burner over medium heat to melt the butter and once the stick was almost totally melted, I emptied in the package of beef and started browning it. I turned up the burner to medium high heat to cook the beef and as I talked to my mom on the phone, I browned it up and added in the milk and spooned in the flour. Then dropping range temp back down to medium, I let the sauce start going through it’s thickening process. Stirring occasionally, the sauce eventually reduced producing a dark white, beefing looking topping that would make the best chipped beef enthusiasts envious. I popped 2 slices of Martins Whole Grain potato bread into the toasted on brown level, waited a couple minutes for the toast to be ready. Took it out, cut it into triangles, placed them side by side on a plate and spooned half the mixture over the bread and took it in the other room for an amazing breakfast.

It was easy and delicious and didn’t take much time at all. The recipe said you should slowly stir in the milk then add the flour. I didn’t do that and it still turned out perfect. But if it’s not to your liking doing it my way….do it their way. I hope you enjoy it.
